- 250 g butter good quality, at room temperature
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic finely chopped
- 1 lemon zested
- 1 teaspoon red chilli flakes
- 1 tablespoon chives finely sliced
- 2 tablespoons dill leaves picked
- cracked black pepper
Instructions
- Spread the butter onto a board and smooth it out with the back of a spoon. Set aside.
- Place a small frying pan over medium heat. Add the olive oil and heat for 30 seconds. Add the garlic and cook, stirring continuously so it doesn’t burn, for 2 minutes or until fragrant. Remove and let it cool for 5–10 minutes.
- Drizzle the garlic and oil over the butter. Add the lemon zest, red chilli flakes, chopped chives and dill. Sprinkle over some cracked black pepper. Serve as a starter with bread, crackers, pita chips or crudites.
