BUTTER BOARD

Serves 8 (but should serve 20, so the 8 people don’t have a heart attack at your get-together)

Ingredients:

  • 250g good quality butter

  • 2 cloves garlic, finely chopped

  • 1 tablespoon extra Virgin olive oil

  • Zest of one lemon

  • 1 tablespoon chives, finely sliced

  • 2 tablespoons dill, leaves picked

  • Black pepper

Method:

  1. Spread butter onto a board and smooth it out with the back of a spoon. Set aside.

  2. Place a small frying pan on medium heat. Add olive oil and heat for 30 seconds. Add garlic and cook, stirring continuously so it doesn’t burn, for 2 mins or until fragrant. Remove and let it cool for 5-10 mins.

  3. Drizzle the garlic and oil over the butter. Then add the lemon zest, red chilli flakes, chopped chives and dill. Sprinkle over some cracked black pepper. Serve.
