Healthy (No Oil) Zucchini Slice
This recipe is one of my all time faves. I make it all the time because it’s the perfect snack, lunch box item, lunch dish alongside a salad, perfect for babies and kids too – so versatile!!!It also freezes beautifully!
Ingredients
- 1 green zucchinis large, grated
- 1 cup sweet potato medium, grated (or tinned corn)
- 5 rasher bacons ,diced
- 1 brown onion ,diced
- 1 cup tasty cheese ,grated
- 5 eggs ,whisked
- 1 cup self-raising flour
- sea salt
- cracked black pepper
Instructions
Method:
- In a large bowl, add your zucchini, sweet potato, bacon, onion and tasty cheese.
- In a separate bowl, add your eggs and SR flour. Combine.
- Add you egg mix to your zucchini mix and combine. Season well.
- Pour into a lined square cake tin and flatten down with a spoon or spatula.
- Bake in the oven for approx 35 mins at 180 degrees Celsius.
- YUMMO!!!!! I have to stick mine in the freezer pretty quickly or I actually devour the whole thing. Give it a shot 👍
