Healthy (No Oil) Zucchini Slice
This recipe is one of my all time faves. I make it all the time because it’s the perfect snack, lunchbox item or lunch dish alongside a salad. It's also great for babies and kids and it freezes beautifully – so versatile!
Ingredients
- 1 zucchini large, grated
- 1 cup sweet potato grated (or use canned corn)
- 5 bacon rashers diced
- 1 brown onion diced
- 1 cup tasty cheese grated
- 5 eggs whisked
- 1 cup self-raising flour
- sea salt & cracked black pepper
Instructions
- Preheat the oven to 180°C. Line a square cake tin with baking paper.
- Place the zucchini, sweet potato, bacon, onion and tasty cheese in a large bowl and mix well.
- In a separate bowl, place the eggs and flour. Combine.
- Add the egg mix to the zucchini mix and combine. Season well.
- Pour into the cake tin and flatten down with a spoon or spatula. Bake for about 35 minutes or until cooked through.
- Yummo! I have to stick mine in the freezer pretty quickly or I devour the whole thing. Give it a shot! 👍
