Healthy (No Oil) Zucchini Slice

This recipe is one of my all time faves. I make it all the time because it’s the perfect snack, lunchbox item or lunch dish alongside a salad. It's also great for babies and kids and it freezes beautifully – so versatile!

Ingredients
 
 

  • 1 zucchini large, grated
  • 1 cup sweet potato grated (or use canned corn)
  • 5 bacon rashers diced
  • 1 brown onion diced
  • 1 cup tasty cheese grated
  • 5 eggs whisked
  • 1 cup self-raising flour
  • sea salt & cracked black pepper

Instructions
 

  • Preheat the oven to 180°C conventional (160°C fan-forced). Line a square cake tin with baking paper.
  • Place the zucchini, sweet potato, bacon, onion and tasty cheese in a large bowl and mix well.
  • In a separate bowl, place the eggs and flour. Combine.
  • Add the egg mix to the zucchini mix and combine. Season well.
  • Pour into the cake tin and flatten down with a spoon or spatula. Bake for about 35 minutes or until cooked through.
  • Yummo! I have to stick mine in the freezer pretty quickly or I devour the whole thing. Give it a shot! 👍
