HEALTHY (NO OIL) ZUCCHINI SLICE

This recipe is one of my all time faves. I make it all the time because it’s the perfect snack, lunch box item, lunch dish alongside a salad, perfect for babies and kids too - so versatile!!!

It also freezes beautifully!

Ingredients:

  • 1 large zucchini, grated

  • 1 cup of sweet potato, grated (or tinned corn)

  • 5 rashers bacon, diced

  • 1 brown onion, diced

  • 1 cup tasty cheese, grated

  • 5 eggs, whisked

  • 1 cup SR flour

  • Salt & Pepper

Method:

  1. In a large bowl, add your zucchini, sweet potato, bacon, onion and tasty cheese.

  2. In a separate bowl, add your eggs and SR flour. Combine.

  3. Add you egg mix to your zucchini mix and combine. Season well.

  4. Pour into a lined square cake tin and flatten down with a spoon or spatula.

  5. Bake in the oven for approx 35 mins at 180 degrees Celsius.

YUMMO!!!!! I have to stick mine in the freezer pretty quickly or I actually devour the whole thing. Give it a shot 👍
