Healthy (No Oil) Zucchini Slice

This recipe is one of my all time faves. I make it all the time because it’s the perfect snack, lunch box item, lunch dish alongside a salad, perfect for babies and kids too – so versatile!!!
It also freezes beautifully!

Ingredients
 
 

  • 1 green zucchinis large, grated
  • 1 cup sweet potato medium, grated (or tinned corn)
  • 5 rasher bacons ,diced
  • 1 brown onion ,diced
  • 1 cup tasty cheese ,grated
  • 5 eggs ,whisked
  • 1 cup self-raising flour
  • sea salt
  • cracked black pepper

Instructions
 

Method:

  • In a large bowl, add your zucchini, sweet potato, bacon, onion and tasty cheese.
  • In a separate bowl, add your eggs and SR flour. Combine.
  • Add you egg mix to your zucchini mix and combine. Season well.
  • Pour into a lined square cake tin and flatten down with a spoon or spatula.
  • Bake in the oven for approx 35 mins at 180 degrees Celsius.
  • YUMMO!!!!! I have to stick mine in the freezer pretty quickly or I actually devour the whole thing. Give it a shot 👍
