Teriyaki Beef Bowls

- 1 tablespoon extra virgin olive oil
- 500 g beef mince
- 1 teaspoon ginger finely diced
- 2 garlic cloves finely diced
- 1/3 cup teriyaki sauce store-bought or homemade
- 1 tablespoon sweet chilli sauce optional
- 2 cups rice cooked white, brown, or jasmine
- 2 cups purple cabbage finely sliced
- 2 carrots large shredded
- 1 1/2 cups frozen edamame beans thawed
Top:
- Sesame seeds
- Kewpie mayo
- Sriracha
Instructions
- Heat olive oil in a large pan over medium heat. Add the beef mince and cook for 5-6 minutes, breaking it up with a spoon, until browned. Stir in the diced ginger and garlic, cooking for 1 minute until fragrant.
- Add the teriyaki sauce and sweet chilli sauce (if using). Simmer for 2–3 minutes, until the beef is coated and glossy.
- In a large bowl, mix together the cabbage, carrot and edamame beans. Toss gently.
- Divide the cooked rice between 4 meal prep containers. Top each with the teriyaki beef, and then the cabbage mix.
- Sprinkle with sesame seeds. Drizzle with Kewpie mayo and sriracha just before serving.
