Healthy (No Oil) Zucchini Slice
This recipe is one of my all time faves. I make it all the time because it’s the perfect snack, lunchbox item or lunch dish alongside a salad. It's also great for babies and kids and it freezes beautifully – so versatile!

1 zucchini large, grated 1 cup sweet potato grated (or use canned corn) 5 bacon rashers diced 1 brown onion diced 1 cup tasty cheese grated 5 eggs whisked 1 cup self-raising flour sea salt & cracked black pepper
Preheat the oven to 180°C conventional (160°C fan-forced). Line a square cake tin with baking paper.
Place the zucchini, sweet potato, bacon, onion and tasty cheese in a large bowl and mix well.

In a separate bowl, place the eggs and flour. Combine.
5 eggs, 1 cup self-raising flour
Add the egg mix to the zucchini mix and combine. Season well.

Pour into the cake tin and flatten down with a spoon or spatula. Bake for about 35 minutes or until cooked through.
