Spread the butter onto a board and smooth it out with the back of a spoon. Set aside.
250 g butter
Place a small frying pan over medium heat. Add the olive oil and heat for 30 seconds. Add the garlic and cook, stirring continuously so it doesn’t burn, for 2 minutes or until fragrant. Remove and let it cool for 5–10 minutes.
1 tablespoon extra virgin olive oil, 2 cloves garlic
Drizzle the garlic and oil over the butter. Add the lemon zest, red chilli flakes, chopped chives and dill. Sprinkle over some cracked black pepper. Serve as a starter with bread, crackers, pita chips or crudites.
