CREAMY RICOTTA TOAST WITH BURSTING CHERRY TOMATOES & BASIL

I love promoting good quality gluten free products, as sometimes it’s really hit and miss when it comes to Gluten Free items.

@abbottsbakery has a variety of gluten free breads that I really like, including wholemeal, soy & linseed and sourdough.

This is a go-to breakfast (or lunch) that I often make. It doesn’t take long, it’s full of flavour and it’s delicious!

Serves 2


Ingredients:

  • 4 pieces @abbottsbakery gluten free bread (I went with wholemeal)

  • 200g cherry tomatoes

  • 1 tablespoon extra Virgin olive oil

  • 1 teaspoon dried Italian herbs

  • Cracked black pepper

  • Sea salt flakes

  • 2 tablespoons ricotta cheese

  • Basil leaves to serve


Method:

  1. Place a medium fry pan onto medium heat. Add the olive oil and heat for 30 seconds. Add the cherry tomatoes and cook, shaking the pan every 1-2 minutes, for 8-10 minutes. At the last minute add the dried Italian herbs and mix through gently.
    Place the bread in the toaster until desired crispiness. Spread over the ricotta, top with the warm tomatoes, season well and top with fresh basil leaves.
