Creamy Ricotta Toast With Bursting Cherry Tomatoes & Basil
This is a go-to breakfast or lunch for me. It doesnβt take long and is full of flavour!

Ingredients
- 1 tablespoon extra virgin olive oil
- 200 g cherry tomatoes
- 1 teaspoon italian herbs dried
- 4 slices bread of your choice
- 2 tablespoons ricotta cheese
- sea salt & cracked black pepper
- basil leaves to serve
Instructions
- Place a medium frying pan over medium heat. Add the olive oil and heat for 30 seconds. Add the cherry tomatoes and cook, shaking the pan every 1β2 minutes, for 8β10 minutes. - Place the bread in the toaster until it reaches your desired crispiness.4 slices bread
