RAW SNICKERS SLICE

No bake - done in 15 minutes

Ingredients:

  • 500 grams pitted dates, soaked in boiling water, 10 mins

  • 1/2 cup natural smooth peanut butter

  • 2 teaspoons of vanilla extract

  • 1/2 cup of coconut oil

  • 1 cup of puffed brown rice

  • 1/2 cup unsalted roasted peanuts, roughly chopped

  • 1.5 cups of dark chocolate chips, melted

Method:

  1. Place the dates, peanut butter, vanilla and coconut oil in a food processor or blender and blend until a smooth paste. If it’s very thick, add a little boiling water to thin it out.

  2. Place the date mix, puffed rice and peanuts in a bowl and combine.

  3. Press the mix into a lined baking tray (10cm x 20cm).

  4. Pour over the melted chocolate (you can do this on the stove or in the microwave) and spread evenly with a spatula.

Place in the fridge or freezer for 45 mins. Remove from the pan and slice into squares with a hot knife.

Tip: if the slice is cracking when you’re cutting it, gently turn it upside down and cut it like this.

This slice freezes beautifully, so store in the freezer and pull out when you need a little treat.
