Raw Snickers Slice

Ingredients
 
 

  • 500 g pitted dates soaked in boiling water for 10 minutes, drained
  • 1/2 cup peanut butter natural smooth
  • 2 teaspoons vanilla extract
  • 1/2 cup coconut oil
  • 1 cup puffed brown rice
  • 1/2 cup peanuts unsalted, roasted, roughly chopped
  • 1 1/2 cups dark chocolate chips melted

Instructions
 

  • Line a 20 cm x 10 cm slice tin with baking paper.
  • Place the dates, peanut butter, vanilla and coconut oil in a food processor or blender and blend to a smooth paste. If it’s very thick, add a little boiling water to thin it out.

  • Place the date mix, puffed rice and peanuts in a bowl and combine. Press the mix into the prepared tin.

  • Pour over the melted chocolate and spread evenly with a spatula.
    1 1/2 cups dark chocolate chips
  • Place in the fridge or freezer for 45 minutes to set. Remove from the tin and slice into squares with a hot knife.
