Place the dates, peanut butter, vanilla and coconut oil in a food processor or blender and blend to a smooth paste. If it’s very thick, add a little boiling water to thin it out.
Place the date mix, puffed rice and peanuts in a bowl and combine. Press the mix into the prepared tin.
Pour over the melted chocolate and spread evenly with a spatula.
Place in the fridge or freezer for 45 minutes to set. Remove from the tin and slice into squares with a hot knife.
If the slice is cracking when you’re cutting it, gently turn it upside down and try cutting it this way.This slice freezes beautifully, so store it in the freezer and pull it out when you need a little treat.
