White Choc Peanut Butter Cups

- 3/4 cup peanut butter smooth or crunchy
- 1 scoop protein powder optional
- 2 tablespoons pure maple syrup
- 2-3 tablespoons desiccated or shredded coconut
- 2 tablespoons mini white chocolate chips
- Topping:
- 3/4 cup mini white chocolate chips
- 1 teaspoon coconut oil
Instructions
- In a bowl, mix together the peanut butter, protein powder (if using), maple syrup, coconut, and chocolate chips until well combined.3/4 cup peanut butter, 1 scoop protein powder, 2 tablespoons pure maple syrup, 2-3 tablespoons desiccated, 2 tablespoons mini white chocolate chips
- Using a mini muffin tray, scoop a tablespoon sized amount of mixture into each muffin hole. Press down firmly so the base is even. Repeat until all the mixture is used.
