Ingredients: 1.3 kg chuck steak or beef brisket (cut into large chunks); 2 tablespoon plain flour; sea salt; cracked black pepper; 1-2 tablespoon extra virgin olive oil; 1 large brown onion (finely chopped); 3 cloves garlic (finely chopped); 1 large carrot (finely chopped); 1-2 tablespoons dried Italian herbs; 3 tablespoons tomato paste; 400 g tinned tomatoes; ½ cup red wine (optional, but adds great depth); 1 cup beef stock (add ½ cup if not using wine); 2–3 cups mushrooms (sliced); pappardelle pasta (cooked ); Reserved pasta water; Freshly grated parmesan cheese; Parsley (optional)
