Ingredients: 2-3 green zucchinis; 1-2 yellow zucchinis (optional); 3 small lemons (juiced); 4 to 5 tablespoons extra-virgin olive oil; Salt flakes (to taste); Black pepper; 2 tablespoons parsley (finely chopped); Fresh mint or basil (torn); 1 cup cherry tomatoes (halved); 1/3 cup olives (pitted); 2 to 3 tablespoons pine nuts; 1/3 cup finely grated parmesan
