Breakfast Oat Cookies
Makes 16 cookies
Ingredients
- 1 1/2 cups oats
- 1/4 cup plain flour or wholemeal flour
- 1/4 cup shredded coconut
- 1/3 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup almonds sliced
- 3 tablespoons chia seeds or flax seeds
- 1/3 cup dried cranberries
- 1 teaspoon cinnamon
- 1/2 cup maple syrup pure
- 1/2 cup tahini or almond butter
- 1 egg lightly whisked
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 180°C. Line a tray with baking paper.
- Mix all the dry ingredients in a bowl, then mix all the wet ingredients in another bowl. Combine the dry and wet ingredients.
- Scoop balls of dough with a cookie scoop. Roll the balls, place on the tray and press down slightly.
- Bake for 12–14 minutes, then leave to cool. These cookies can also be frozen.
