Breakfast Oat Cookies

Makes 16 cookies

Ingredients
 
 

  • 1.5 cups oats
  • 1/4 cup plain flour or wholemeal flour
  • 1/4 cup shredded coconut
  • 1/3 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup almonds sliced
  • 3 tablespoons chia seeds or flax seeds
  • 1/3 cup dried cranberries
  • 1 teaspoon cinnamon
  • 1/2 cup maple syrup pure
  • 1/2 cup tahini or almond butter
  • 1 egg lightly whisked
  • 1 teaspoon vanilla extract

Instructions
 

Method:

  • Preheat the oven to 180 degrees.
  • Line the tray with baking paper.
  • Mix all dry ingredients in a bowl and then mix all wet ingredients in another bowl.
  • Combine all together. Cookie scoop them out, roll and press down slightly.
  • Bake for 12-14 mins. Let cool.
  • These cookies can be frozen.
