BREAKFAST OAT COOKIES
Makes 16 cookies
Ingredients:
1.5 cups rolled oats
1/4 cup wholemeal or plain flour
1/4 cup shredded coconut
1/3 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup sliced almonds
3 tablespoons chia seeds or flax seeds
1/3 cup dried fruit (eg. dried cranberries)
1 teaspoon ground cinnamon
1/2 cup pure maple syrup
1/2 cup of tahini or almond butter
1 egg, lightly whisked
1 teaspoon vanilla extract
Method:
Preheat the oven to 180 degrees.
Line the tray with baking paper.
Mix all dry ingredients in a bowl and then mix all wet ingredients in another bowl.
Combine all together. Cookie scoop them out, roll and press down slightly.
Bake for 12-14 mins. Let cool.
These cookies can be frozen.
