BREAKFAST OAT COOKIES

Makes 16 cookies

Ingredients:

  • 1.5 cups rolled oats

  • 1/4 cup wholemeal or plain flour

  • 1/4 cup shredded coconut

  • 1/3 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/2 cup sliced almonds

  • 3 tablespoons chia seeds or flax seeds

  • 1/3 cup dried fruit (eg. dried cranberries)

  • 1 teaspoon ground cinnamon

  • 1/2 cup pure maple syrup

  • 1/2 cup of tahini or almond butter

  • 1 egg, lightly whisked 

  • 1 teaspoon vanilla extract 

Method:

  1. Preheat the oven to 180 degrees.

  2. Line the tray with baking paper.

  3. Mix all dry ingredients in a bowl and then mix all wet ingredients in another bowl. 

  4. Combine all together. Cookie scoop them out, roll and press down slightly.

  5. Bake for 12-14 mins. Let cool.

These cookies can be frozen.
