Easter One Bowl Chocolate Cake
Have some fun this Easter and get the kids involved. This cake is very easy – all the mix goes into one bowl and you don’t have to worry about over mixing! Let the kids choose some fun Easter decorations to go on top. If you don’t have kids, feel free to decorate with your fave chocolates or simply enjoy on its own!
Ingredients
- 125 g butter softened
- 1 cup brown sugar firmly packed
- 1/2 cup caster sugar
- 3 eggs
- 2 cups plain flour
- 1/3 cup cocoa powder
- 1 teaspoon bicarbonate of soda
- 1/4 teaspoon sea salt
- 2/3 cup sour cream
- 1/2 cup water
- Easter eggs or any candies you like, to decorate
Chocolate Icing
- 100 g dark chocolate chopped coarsely
- 60 g butter chopped coarsely
- 1/2 cup icing sugar
- 1/4 cup sour cream
Instructions
- Preheat the oven to 180°C conventional (160°C fan-forced). Spray the bottom of a square cake tin with olive oil spray, then line with baking paper so it comes up the sides a little.
- Throw all the ingredients except the Easter eggs into a large mixing bowl. Combine. Beat with an electric mixer for about 3–4 minutes until well mixed. Pour into the cake tin.
- Bake for 40–45 minutes. Remove and let cool.
- While the cake is cooking, make the icing. Combine all the ingredients in a saucepan and gently warm over low heat until combined. Place in the fridge for 10 minutes so it thickens up slightly. Spread over the cake.
- Decorate with any Easter eggs or candies you like!
