Serves 16

Ingredients

  • 125 grams butter, softened

  • 1 cup firmly packed brown sugar

  • 1/2 cup caster sugar

  • 3 eggs

  • 2 cups plain flour

  • 1/3 cup cocoa powder

  • 1 teaspoon bicarbonate of soda (baking soda)

  • 1/4 tsp salt

  • 2/3 cup sour cream

  • 1/2 cup water

Chocolate icing

  • 100 grams dark chocolate, chopped coarsely

  • 60 grams butter, chopped coarsely

  • 1/2 cup icing sugar

  • 1/4 cup sour cream

Decorations:

  • Any Easter eggs or candies you like!

Method:

  1. Preheat oven to 180°C. Spray the bottom with some olive oil spray and then line with some baking paper - so it comes up the sides a little.

  2. Throw all ingredients into a large mixing bowl. Combine. Bear with an electric mixer for about 3-4 minutes until we’ll mixed. Pour into the cake tin.

  3. Cook for 40-45 mins in the oven. Remove and let cool.

  4. While the cake is cooking, make the icing. Combine all ingredients in a saucepan and gently heat on low until all combine. Put it in the fridge for 10 minutes so it thickens up slightly. Spread over the cake.

  5. To decorate - use any Easter eggs or candies you like and pop over the top.
