Tahini Oat Bars

Ingredients
  

  • ½ cup tahini
  • ½ cup honey maple syrup, or rice malt syrup
  • 2 cups rolled oats
  • ½ cup dried fruit currants, apricots, raisins, or sultanas
  • 3 tablespoons chia seeds
  • 1 Pinch salt
  • 2 tablespoons sesame seeds
  • ½ cup pumpkin seeds
  • 2 tablespoons coconut oil melted

Instructions
 

  • Preheat the oven to 180°C (160°C fan-forced).
  • In a large bowl, combine oats, dried fruit, chia seeds, sesame seeds, pumpkin seeds, and salt. Add tahini, honey (or syrup), and melted coconut oil. Mix until well combined. Add 1 teaspoon of water if it’s too dry.
  • Line the baking tin with baking paper. Transfer mixture into the prepared tin. Press down firmly and evenly with the back of a spatula.
  • Bake for 15–20 minutes, or until lightly golden. Allow to cool completely in the tin. Refrigerate for 2-3 hours.
  • Slice into bars or squares. Store in an airtight container in the fridge for up to 1 week.
