Peanut Butter Cookies
Makes 12–14 cookiesPrep time: 15 minutes
Ingredients
- 1 1/2 cups almond meal
- 2 tablespoons coconut oil melted
- 1/4 cup peanut butter
- 2 1/2 tablespoons rice malt syrup or honey
- 1 tablespoon coconut flakes
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 175°C. Line a tray with baking paper.
- Place all the ingredients in a large bowl and mix until a dough is formed.
- Roll the dough into balls to make 12–14 cookies, then place on the tray. Use the back of a fork to gently push down on each cookie (it helps if the fork is dipped in hot water).
- Bake for 10–12 minutes or until golden brown. Don’t worry if they feel a bit soft, they will harden as they cool.
- Let them fully cool on the tray. Enjoy!
