PEANUT BUTTER COOKIES

Makes 12-14 cookies

Prep time: 15 minutes

Ingredients:

  • 1.5 cups almond meal

  • 2 tablespoons of coconut oil, melted

  • 1/4 cup of peanut butter

  • 2.5 tablespoons of rice malt syrup (or honey)

  • 1 tablespoon of coconut flakes

  • 1/2 teaspoon of baking powder

Method

  1. Preheat oven to 175 degrees.

  2. Place all ingredients in a bowl and mix until a dough is formed.

  3. Roll the dough into balls to make 12-14 cookies, place on a baking tray. Use the back of a fork to gently push down (it helps if the fork is dipped in hot water).

  4. Bake in the oven for around 10 -12 minutes or until golden brown. Don’t worry if they feel a bit soft, they will harden as they cool.

  5. Let them fully cool on the tray. Enjoy!!!!
