Peanut Butter Cookies

Makes 12–14 cookies

Ingredients
  

  • 1 1/2 cups almond meal
  • 2 tablespoons coconut oil melted
  • 1/4 cup peanut butter
  • 2 1/2 tablespoons rice malt syrup or honey
  • 1 tablespoon coconut flakes
  • 1/2 teaspoon baking powder

Instructions
 

  • Preheat the oven to 175°C conventional (155°C fan-forced). Line a tray with baking paper.
  • Place all the ingredients in a large bowl and mix until a dough is formed.
    1 1/2 cups almond meal, 2 tablespoons coconut oil, 1/4 cup peanut butter, 2 1/2 tablespoons rice malt syrup, 1 tablespoon coconut flakes, 1/2 teaspoon baking powder
  • Roll the dough into balls to make 12–14 cookies, then place on the tray. Use the back of a fork to gently push down on each cookie (it helps if the fork is dipped in hot water).
  • Bake for 10–12 minutes or until golden brown. Don’t worry if they feel a bit soft, they will harden as they cool.
  • Let them fully cool on the tray. Enjoy!
