Actual Healthy Banana Bread
I’ve been banging on for years that most banana bread recipes or banana bread you buy in cafes are not healthy at all! Most recipes use less healthy ingredients such as butter, refined sugar and vegetable oil. This recipe is actually HEALTHY and uses ingredients that are much better for you. It's also simple and takes no time at all to make. Perfect for a snack, after dinner delight or school lunchbox option (you can use 2 1/2 cups of plain flour and omit the almond meal if your school is nut free).
Ingredients
- 2 bananas medium, overripe
- 1/3 cup light olive oil
- 2 eggs
- 1/3 cup milk any type is fine
- 1/3 cup honey
- 1 1/2 cups plain flour wholemeal or GF flour are also fine
- 1 cup almond meal
- 2 teaspoons baking powder
Instructions
- Preheat the oven to 180°C. Line a loaf tin with baking paper.
- Mash the bananas in a large bowl with a fork. Add all the wet ingredients to the bowl and combine.
- Add the dry ingredients to the wet and combine.
- Pour the mixture into the tin. Feel free to press a halved banana on top for decoration.
- Bake for 45 minutes until cooked through. Remove and cool before slicing.
