Egg, Bacon & Cherry Tomato Quiches
One of the things I love most about eggs, apart from their wonderful nutritional benefits, is that you don’t need to spend hours creating recipes with them. They can be made into a delicious meal very quickly and easily.These egg, bacon and cherry tomato quiches are a perfect example of that. They take 10 minutes to whip up and the result is a delicious and healthy snack for your little ones (and adults)!Makes 12 muffin-sized quiches
Ingredients
- 8 eggs lightly whisked
- 1/4 cup thickened cream or milk of choice
- 5 bacon rashers finely diced
- 1/2 cup cherry tomatoes cut in half
- 2 spring onions finely sliced
- 1 cup tasty cheese grated
- sea salt & cracked black pepper optional
Instructions
- Preheat the oven to 180°C. Grease a 12-hole muffin tin with olive oil spray or butter.
- Place the eggs, cream or milk, bacon, cherry tomatoes, spring onion and tasty cheese in a large bowl. Combine and season with salt and pepper, if desired.
- Pour the mixture into the muffin tin, leaving a little bit of room at the top as the mix will expand while cooking.
- Bake for 20–25 minutes until puffed up and golden. Remove from the oven, let them cool for 20 minutes and enjoy!
