EGG, BACON & CHERRY TOMATO QUICHES

I think it’s very obvious that I have an absolute love for @australianeggs

One of the things I love most about them, apart from their wonderful nutritional benefits for little ones, is that you don’t need to spend hours creating recipes with them. They can be made into a delicious meal very quickly and easily.

These egg, bacon & cherry tomato quiches are a perfect example of that. They take 10 minutes to whip up and the result is a delicious, healthy and perfect snack for your little ones (and adults)!

Makes 12 muffin size quiches

Ingredients:

  • 8 eggs, lightly whisked

  • 1/4 cup thickened cream or milk of choice

  • 5 rashers bacon, finely diced

  • 1/2 cup cherry tomatoes, cut in half

  • 2 spring onions, finely sliced

  • 1 cup tasty cheese, grated

  • Sea salt & pepper (optional)

Method:

  1. Preheat the oven to 180 degrees Celsius.

  2. To a large bowl add eggs, cream/milk, bacon, cherry tomatoes, spring onion and tasty cheese. Combine the mix and season well (optional).

  3. Grease a 12-hole muffin tin with olive oil spray (or butter) and pour the mixture in. Leave a little bit of room at the top as the mix will expand while cooking.

  4. Bake in the oven for 20-25 minutes (until they are puffed up and golden). Remove from the oven, let them cool for 20 minutes and enjoy!!
