One of the things I love most about eggs, apart from their wonderful nutritional benefits, is that you don’t need to spend hours creating recipes with them. They can be made into a delicious meal very quickly and easily.These egg, bacon and cherry tomato quiches are a perfect example of that. They take 10 minutes to whip up and the result is a delicious and healthy snack for your little ones (and adults)!Makes 12 muffin-sized quiches
Preheat the oven to 180°C conventional (160°C fan-forced). Grease a 12-hole muffin tin with olive oil spray or butter.
Place the eggs, cream or milk, bacon, cherry tomatoes, spring onion and tasty cheese in a large bowl. Combine and season with salt and pepper, if desired.
Pour the mixture into the muffin tin, leaving a little bit of room at the top as the mix will expand while cooking.
Bake for 20–25 minutes until puffed up and golden. Remove from the oven, let them cool for 20 minutes and enjoy!
