Egg, Bacon & Cherry Tomato Quiches

One of the things I love most about eggs, apart from their wonderful nutritional benefits, is that you don’t need to spend hours creating recipes with them. They can be made into a delicious meal very quickly and easily.
These egg, bacon and cherry tomato quiches are a perfect example of that. They take 10 minutes to whip up and the result is a delicious and healthy snack for your little ones (and adults)!
Makes 12 muffin-sized quiches

Ingredients
 
 

  • 8 eggs lightly whisked
  • 1/4 cup thickened cream or milk of choice
  • 5 bacon rashers finely diced
  • 1/2 cup cherry tomatoes cut in half
  • 2 spring onions finely sliced
  • 1 cup tasty cheese grated
  • sea salt & cracked black pepper optional

Instructions
 

  • Preheat the oven to 180°C conventional (160°C fan-forced). Grease a 12-hole muffin tin with olive oil spray or butter.
  • Place the eggs, cream or milk, bacon, cherry tomatoes, spring onion and tasty cheese in a large bowl. Combine and season with salt and pepper, if desired.
    8 eggs, 1/4 cup thickened cream, 5 bacon rashers, 1/2 cup cherry tomatoes, 2 spring onions, 1 cup tasty cheese, sea salt & cracked black pepper
  • Pour the mixture into the muffin tin, leaving a little bit of room at the top as the mix will expand while cooking.
  • Bake for 20–25 minutes until puffed up and golden. Remove from the oven, let them cool for 20 minutes and enjoy!
