Passionfruit & Citrus Slice

This slice is one of my favourite guilty pleasures! It combines some of my most loved ingredients – coconut, lemon and passionfruit. Super easy and so yummy.

Ingredients
 
 

Base

  • 125 g butter melted
  • 1 cup self-raising flour
  • 1/2 cup shredded coconut
  • 3/4 cup caster sugar

Topping

  • 600 g sweetened condensed milk about 1 1/2 cans
  • 2/3 cups lemon juice
  • 3 passionfruit pulp

Instructions
 

  • Preheat the oven to 180°C. Line a 28 cm x 18 cm baking tray with baking paper.
  • For the base: Place all the ingredients in a bowl and mix well. Press into the prepared tray and spread evenly with a wooden spoon (it doesn’t have to be perfect). Bake for 12–14 minutes or until golden brown. Remove and let cool.
  • Reduce the oven temperature to 160°C.
  • For the topping: Place all the ingredients in a bowl and mix well. It will thicken up as you mix. Spread evenly over the cooked base, then bake for 15 minutes.
  • Refrigerate for 2–3 hours to firm up, then slice into pieces. It is magical!
