PASSIONFRUIT & CITRUS SLICE
WOW – one of my favourite guilty pleasures to enjoy! Combines some of my favourite things - coconut, lemon and passionfruit. Super easy and so yummy
Makes 12 pieces

Cook time: 15 mins
Ingredients:
Base:
125 grams of butter, melted
1 cup of self raising flour
1/2 cup of shredded coconut
3/4 cup of caster sugar
Topping:
600 grams (1.5 cans of condensed milk)
2/3 cups of lemon juice
Pulp of 3 passionfruit
Method:
Preheat oven to 180 degrees. Line a baking tray (about 28cm X 18cm)
In a mixing bowl, add the melted butter, self-raising flour, shredded coconut and caster sugar. Mix well. Press this mix into the lined baking tray (doesn’t have to be perfect) and spread evenly with a wooden spoon. Bake in the oven for 12-14 mins or until golden brown. Remove and let cool. Reduce the temperature to 160 degrees.
Place the condensed milk, lemon juice and passionfruit pulp into a bowl and mix together. It will thicken up as you mix. Spread this oven the cooked base and spread out evenly. Bake for 15 mins.
Place the slice into the fridge for 2-3 hours to firm up and then cut into pieces. It is MAGICAL!!!!!
