CHOC CHIP BANANA OAT BARS

Makes 18 Bars

Cooking time: 30 minutes 

Ingredients:

  • 2 ripe bananas mashed

  • 1/4 cup extra virgin olive oil

  • 1/2 cup almond butter

  • 1/3 cup pure maple syrup

  • 1 teaspoon vanilla 

  • 1.5 cups oats 

  • 1 cup puffed quinoa  

  • 1/4  teaspoon salt

  • 1/2 cup shredded coconut

  • 1/2 teaspoon baking powder

  • 1/2 cup choc chips (more for top)

Method:

  1. Preheat your oven to 180°C


  2. In a bowl, mix the mashed bananas, extra virgin olive oil, almond butter, pure maple syrup, and vanilla


  3. In another bowl, combine the oats, puffed quinoa, salt, shredded coconut, baking powder, and choc chips.


  4. Add the wet ingredients to the dry ingredients and mix well.


  5. Line a slice tin with baking paper and press the mixture firmly into the tin to ensure a tight slice.


  6. Bake in the oven for 25-30 minutes.
