Quick, Healthy Beef & Veggies With Noodles
Lightning fast and soooo delicious. You can use any veggies you like in this. If they take longer to cook, just throw them in earlier. You can also use chicken or pork mince for this one.My girls love this recipe, minus the chilli, so we have this on a regular basis.
Ingredients
- 270 g egg noodles fresh, or any noodles you like
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic finely chopped
- 3 cm ginger piece finely chopped
- 1/2 red chilli finely chopped (optional)
- 500 g beef mince
- 1 bunch broccolini roughly chopped
- 1 red capsicum cut into thin strips
- 1/2 cup snow peas trimmed
- fried shallots to serve (optional)
Sauce
- 2 tablespoons oyster sauce
- 2 tablespoons soy sauce or tamari
- 1 teaspoon honey
- 1 tablespoon water
- 1 teaspoon cornflour
Instructions
- Bring a large pot of water to the boil. Cook the noodles according to packet instructions. Drain and set aside.
- For the sauce: Combine all the ingredients in a small bowl.
- Place a large frying pan over medium heat. Add the olive oil, garlic, ginger and chilli (if using). Cook, stirring, for 3 minutes. Add the beef mince and turn the heat up to high. Cook, breaking the mince up with a wooden spoon, for 3–4 minutes.
- Stir through one-quarter of the sauce, just so there is a bit of liquid in the pan. Add the broccolini and capsicum and stir through for about 3 minutes until they become really vibrant. Add the snow peas and the remaining sauce. Stir through over high heat for about 2 minutes. Add the noodles and toss through.
- Serve into bowls and top with fried shallots, if desired.
