Lightning fast and soooo delicious. You can use any veggies you like in this. If they take longer to cook, just throw them in earlier. You can also use chicken or pork mince for this one.My girls love this recipe, minus the chilli, so we have this on a regular basis.
Place a large frying pan over medium heat. Add the olive oil, garlic, ginger and chilli (if using). Cook, stirring, for 3 minutes. Add the beef mince and turn the heat up to high. Cook, breaking the mince up with a wooden spoon, for 3–4 minutes.
1 tablespoon extra virgin olive oil, 2 cloves garlic, 3 cm ginger piece, 1/2 red chilli, 500 g beef mince
Stir through one-quarter of the sauce, just so there is a bit of liquid in the pan. Add the broccolini and capsicum and stir through for about 3 minutes until they become really vibrant. Add the snow peas and the remaining sauce. Stir through over high heat for about 2 minutes. Add the noodles and toss through.
1 bunch broccolini, 1 red capsicum, 1/2 cup snow peas, 270 g egg noodles
Serve into bowls and top with fried shallots, if desired.
