BANANA, DRIED CRANBERRY & OAT COOKIES
These cookies are healthy, easy to throw together and perfect for a snack or the lunchbox!
They also freeze beautifully, so make a batch and pop them in the freezer to easily pull out for those crazy busy school mornings.
Makes 24 cookies
Ingredients:
1.5 cups instant rolled oats
1/3 cup wholemeal plain flour (normal plain flour is also fine)
1/2 cup desiccated coconut
1/2 cup coconut oil or light olive oil
2 teaspoons cinnamon
1 teaspoon vanilla extract
3/4 cup pure maple syrup
1/2 cup oceansprayanz dried cranberries, roughly chopped
2 overripe bananas, mashed
Method:
Preheat the oven to 180 degrees Celsius, fan forced.
Line 2 large baking trays with baking paper.
Mix together all ingredients in a large bowl until well combined.
Using your hands or an ice cream scoop, roll the mix into balls (about the size of a golf ball), lay them on the tray and gently push them down with your hands to flatten.
Bake approx. 18 – 22 minutes, or until golden.
Remove from the oven & let them rest on the baking tray for 5 minutes.
Tip: It helps to roll the mix with wet hands, this stops the mix from get sticky all over your fingers.
