Banana, Dried Cranberry & Oat Cookies
These cookies are healthy, easy to throw together and perfect for a snack or the lunchbox!They also freeze beautifully, so make a batch and pop them in the freezer to easily pull out for those crazy busy school mornings.
Ingredients
- 1.5 cups oats
- 1/3 cup wholemeal plain flour normal plain flour is also fine
- 1/2 cup desiccated coconut
- 1/2 cup coconut oil or light olive oil
- 2 teaspoons cinnamon
- 1 teaspoon vanilla extract
- 3/4 cup maple syrup pure
- 1/2 cup oceans prayanz dried cranberries roughly chopped
- 2 bananas mashed
Instructions
- Preheat the oven to 180 degrees Celsius, fan forced.
- Line 2 large baking trays with baking paper.
- Mix together all ingredients in a large bowl until well combined.
- Using your hands or an ice cream scoop, roll the mix into balls (about the size of a golf ball), lay them on the tray and gently push them down with your hands to flatten.
- Bake approx. 18 – 22 minutes, or until golden.
- Remove from the oven & let them rest on the baking tray for 5 minutes.
Notes
It helps to roll the mix with wet hands, this stops the mix from get sticky all over your fingers.
