Olive, Cherry Tomato & Bocconcini Pasta Salad

Ingredients
- 400 g pasta I used farfalle
- 3 tablespoons pesto good-quality store bought
- 200 g cherry tomatoes halved
- 200 g cherry bocconcini
- 150 g olives halved
- 2 cups spinach or rocket, chopped
- 1/2 bunch basil leaves picked
- 1/2 cup pine nuts toasted
- sea salt & cracked black pepper
- 1 lemon juice squeezed, optional
Instructions
- Cook the pasta as per packet instructions. Drain and reserve 1/4 cup of the starchy pasta water.
- Place the cooked pasta in a salad bowl. Add the pesto and a small amount of the pasta water. Toss until well combined, adding more pasta water if needed.
- Add the cherry tomatoes, bocconcini, olives, spinach, basil and pine nuts and toss well. Season and add lemon juice if desired. Enjoy!
