Olive, Cherry Tomato & Bocconcini Pasta Salad

Ingredients
  

  • 400 g pasta I used farfalle
  • 3 tablespoons pesto good-quality store bought
  • 200 g cherry tomatoes halved
  • 200 g cherry bocconcini
  • 150 g olives pitted & halved
  • 2 cups baby spinach or rocket, chopped
  • 1/2 bunch basil leaves picked
  • 1/2 cup pine nuts toasted
  • sea salt & cracked black pepper
  • 1 lemon juice squeezed, optional

Instructions
 

  • Cook the pasta as per packet instructions. Drain and reserve 1/4 cup of the starchy pasta water.
  • Place the cooked pasta in a salad bowl. Add the pesto and a small amount of the pasta water. Toss until well combined, adding more pasta water if needed.
    400 g pasta, 3 tablespoons pesto
  • Add the cherry tomatoes, bocconcini, olives, spinach, basil and pine nuts and toss well. Season and add lemon juice if desired. Enjoy!
