OLIVE, CHERRY TOMATO & BOCCONCINI PATSA SALAD

Perfect for a weeknight meal or a Summer BBQ ☀️
Serves 4-6
Ingredients:
400 grams of pasta, I used Farfalle
3 tablespoons of good-quality store bought pesto
1/4 cup of pasta water
200 gram tub cheery bocconcini
200 gram punnet of cherry tomatoes, cut in half
150 grams of olives, cut in half
2 cups of chopped spinach or rocket
1/2 bunch of basil, leaves picked
1/2 cup of pine nuts, toasted
Salt
Pepper
Juice of 1 lemon (optional)
Method:
Cook the pasta as per packet instructions. Drain and reserve a small amount of the starchy pasta water.
Pour the cooked pasta into a salad bowl. Add the pesto and a small amount of the pasta water. Toss the salad until well combined.
Add the cherry tomatoes, olives, bocconcini, spinach/rocket, basil, pine nuts and toss well. Season well and add lemon juice if desired. Enjoy!
