Cook the pasta as per packet instructions. Drain and reserve 1/4 cup of the starchy pasta water.
Place the cooked pasta in a salad bowl. Add the pesto and a small amount of the pasta water. Toss until well combined, adding more pasta water if needed.
400 g pasta, 3 tablespoons pesto
Add the cherry tomatoes, bocconcini, olives, spinach, basil and pine nuts and toss well. Season and add lemon juice if desired. Enjoy!
