Asian Chicken Slaw

Ingredients
 
 

  • 1/2 cooked chicken skin removed and mainly white flesh, finely chopped
  • 350 g kale packet, or Asian slaw, store bought, packet dressing removed
  • 1 lebanese cucumber sliced into half moons
  • 3 spring onion finely sliced
  • 1/2 bunch mint leaves picked and roughly chopped
  • 1/4 cup shallots medium, fried

Dressing:

  • 1 lime juice squeezed
  • 1/4 cup fish sauce
  • 1 tablespoon brown sugar
  • 1 red chilli large, finely slices (check heat and add desired amount)

Instructions
 

Method:

  • Shred the meat from half a whole chook. Finely chop the shredded chicken.
  • To a large bowl, add the slaw, cucumber, spring onion, chopped chicken and mint leaves. Toss together.
  • To make the dressing – mix all ingredients together and adjust to taste. Pour over salad – just add half the dressing first and see how you go – you can always add more. Top the salad with fried shallots and enjoy.
