ASIAN CHICKEN SLAW

Serves 2

Prep time: 15 mins

Ingredients:

  • 1/2 cooked chicken (skin removed and mainly white flesh), finely chopped

  • 350g packet of kale or Asian slaw (store bought, packet dressing removed)

  • 1 lebanese cucumber, sliced into half moons

  • 3 spring onion, finely sliced

  • 1/2 bunch of mint, leaves picked and roughly chopped

  • 1/4 cup of fried shallots

Dressing:

  • 1 juicy lime, juice squeezed

  • 1/4 cup of fish sauce

  • 1 tablespoon of brown sugar

  • 1 large red chilli, finely slices (check heat and add desired amount)

Method:

  1. Shred the meat from half a whole chook. Finely chop the shredded chicken.

  2. To a large bowl, add the slaw, cucumber, spring onion, chopped chicken and mint leaves. Toss together.

  3.  To make the dressing – mix all ingredients together and adjust to taste. Pour over salad – just add half the dressing first and see how you go – you can always add more. Top the salad with fried shallots and enjoy.
