Asian Chicken Slaw

Ingredients
- 1/2 cooked chicken
- 350 g kale or asian slaw (store bought, packet dressing removed)
- 1 lebanese cucumber sliced into half moons
- 3 spring onions finely sliced
- 1/2 bunch mint leaves picked & roughly chopped
- 1/4 cup fried shallots
Dressing
- 1 lime juice squeezed
- 1/4 cup fish sauce
- 1 tablespoon brown sugar
- 1 red chilli large, finely sliced (check heat then add desired amount)
Instructions
- Remove the skin from the half chook. Shred the meat, then finely chop.
- Place the chopped chicken, kale or slaw, cucumber, spring onion and mint in a large bowl. Toss together.
- For the dressing: Mix all the ingredients and adjust to taste. Pour half the dressing over the salad and toss. Add more dressing as desired, then top with the fried shallots.
