Remove the skin from the half chook. Shred the meat, then finely chop.
Place the chopped chicken, kale or slaw, cucumber, spring onion and mint in a large bowl. Toss together.
1/2 cooked chicken, 350 g kale , 1 lebanese cucumber, 3 spring onions, 1/2 bunch mint
For the dressing: Mix all the ingredients and adjust to taste. Pour half the dressing over the salad and toss. Add more dressing as desired, then top with the fried shallots.
