Homestyle Chicken Noodle Soup
I LOVE this soup!!!! It’s so hearty and my girls both eat it, which is such a bonus!!! It’s easy, quick to throw together and full of flavour!!!!
Ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil extra virgin
- 1 leek sliced
- 3 cloves garlic finely chopped
- 3 bay leaves
- 3 litters chicken stock
- 2 carrots sliced into rounds
- 2 celery sticks diced
- sea salt
- cracked black pepper
- 2 cups chicken shredded and cooked, rotisserie or poached
- 200 g spaghetti snapped in half
- 2 cups spinach leaves
- 1/3 cup parsley chopped, optional
Instructions
Method:
- Melt butter and olive oil in a large stockpot or Dutch oven over medium heat. Add leek, garlic and cook for about 2-3 minutes. Add bay leaves and stir for 2 minutes, then fill the pot with chicken stock. Let it simmer for 10 minutes.
- Add carrots and celery. Add the shredded chicken and the halved spaghetti. Turn the heat to low and simmer for 10 minutes.
- Add the baby spinach, salt, pepper, parsley (optional) and turn off the heat.
