HOMESTYLE CHICKEN NOODLE SOUP

I LOVE this soup!!!! It’s so hearty and my girls both eat it, which is such a bonus!!! It’s easy, quick to throw together and full of flavour!!!!

Serves 6

Ingredients:

  • 2 tbsp butter

  • 2 tbsp extra virgin olive oil

  • 1 leek, sliced

  • 3 cloves garlic, finely chopped

  • 3 bay leaves

  • 3 litres chicken stock

  • 2 carrots, sliced into rounds

  • 2 celery, diced

  • Salt

  • Pepper

  • 2 cups shredded cooked chicken, rotisserie or poached

  • 200g spaghetti, snapped in half

  • 2 cups baby spinach leaves

  • 1/3 cup parsley chopped (optional)

Method:

  1. Melt butter and olive oil in a large stockpot or Dutch oven over medium heat. Add leek, garlic and cook for about 2-3 minutes. Add bay leaves and stir for 2 minutes, then fill the pot with chicken stock. Let it simmer for 10 minutes.

  2. Add carrots and celery. Add the shredded chicken and the halved spaghetti. Turn the heat to low and simmer for 10 minutes.

  3. Add the baby spinach, salt, pepper, parsley (optional) and turn off the heat.
