Homestyle Chicken Noodle Soup

I LOVE this soup! It’s so hearty and my girls both eat it, which is such a bonus! It’s easy, quick to throw together and full of flavour.

Ingredients
 
 

  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 1 leek sliced
  • 3 cloves garlic finely chopped
  • 3 bay leaves
  • 3 litres chicken stock
  • 2 carrots sliced into rounds
  • 2 celery sticks diced
  • 2 cups cooked chicken shredded (rotisserie or poached)
  • 200 g dried spaghetti snapped in half
  • 2 cups baby spinach
  • 1/3 cup parsley leaves chopped, optional
  • sea salt & cracked black pepper

Instructions
 

  • Melt the butter and olive oil in a large stockpot or dutch oven over medium heat. Add the leek and garlic and cook for about 2–3 minutes. Add the bay leaves and stir for 2 minutes, then fill the pot with the chicken stock and simmer for 10 minutes.
  • Add the carrot, celery, shredded chicken and spaghetti to the pot. Reduce the heat to low and simmer for 10 minutes.
  • Add the spinach and parsley (if using), season well and serve.
