Homestyle Chicken Noodle Soup

I LOVE this soup!!!! It’s so hearty and my girls both eat it, which is such a bonus!!! It’s easy, quick to throw together and full of flavour!!!!

Ingredients
 
 

  • 2 tablespoons butter
  • 2 tablespoons olive oil extra virgin
  • 1 leek sliced
  • 3 cloves garlic finely chopped
  • 3 bay leaves
  • 3 litters chicken stock
  • 2 carrots sliced into rounds
  • 2 celery sticks diced
  • sea salt
  • cracked black pepper
  • 2 cups chicken shredded and cooked, rotisserie or poached
  • 200 g spaghetti snapped in half
  • 2 cups spinach leaves
  • 1/3 cup parsley chopped, optional

Instructions
 

Method:

  • Melt butter and olive oil in a large stockpot or Dutch oven over medium heat. Add leek, garlic and cook for about 2-3 minutes. Add bay leaves and stir for 2 minutes, then fill the pot with chicken stock. Let it simmer for 10 minutes.
  • Add carrots and celery. Add the shredded chicken and the halved spaghetti. Turn the heat to low and simmer for 10 minutes.
  • Add the baby spinach, salt, pepper, parsley (optional) and turn off the heat.
