Homestyle Chicken Noodle Soup
I LOVE this soup! It’s so hearty and my girls both eat it, which is such a bonus! It’s easy, quick to throw together and full of flavour.
Ingredients
- 2 tablespoons butter
- 2 tablespoons extra virgin olive oil
- 1 leek sliced
- 3 cloves garlic finely chopped
- 3 bay leaves
- 3 litres chicken stock
- 2 carrots sliced into rounds
- 2 celery sticks diced
- 2 cups cooked chicken shredded (rotisserie or poached)
- 200 g dried spaghetti snapped in half
- 2 cups spinach
- 1/3 cup parsley leaves chopped, optional
- sea salt & cracked black pepper
Instructions
- Melt the butter and olive oil in a large stockpot or dutch oven over medium heat. Add the leek and garlic and cook for about 2–3 minutes. Add the bay leaves and stir for 2 minutes, then fill the pot with the chicken stock and simmer for 10 minutes.
- Add the carrot, celery, shredded chicken and spaghetti to the pot. Reduce the heat to low and simmer for 10 minutes.
- Add the spinach and parsley (if using), season well and serve.
