GREEN DETOX SOUP

My green detox soup - super healthy, but the flavours from the fresh herbs & ginger are amazing! And the kick from the green chilli is sooooo good!!!

Tip: Check the heat of your green chilli, they can vary so much!! Slice it open and stick a little on your tongue. If it’s super hot, use less. If it’s very weak, use more!!

The Greek yoghurt is so good at balancing the kick out.

Serves 6

Ingredients:

  • 1 tbsp olive oil

  • 1 leek, washed & finely chopped

  • 3 cloves garlic, finely chopped

  • 2 tsps ginger, finely chopped

  • 1 green chilli, finely sliced

  • 1 green zucchini, sliced

  • 5 celery sticks, finely chopped

  • 1 small head broccoli, florets chopped

  • 1 litre vegetable stock or broth

  • 2 cups spinach

  • 2 cups of mixed herbs (whatever you have on hand, I love coriander, mint and parsley in this soup)

  • Salt & pepper

  • Greek or natural yoghurt (to serve)

Method:

  1. Heat a medium saucepan on medium/high heat. Add the olive oil to the pan. Add the leeks, garlic, ginger and green chilli. Stir over heat for 5-8 minutes.

  2. Add the chopped zucchini, celery and broccoli to the saucepan. Stir for 2-4 minutes. Add the vegetable stock to the pan and simmer for 10 mins (just below boiling).

  3. Turn off the heat, then add the spinach and herbs to the pot. Submerge both under the stock and let them wilt over 3-5 minutes. Season well.

  4. Use a hand stick blender or food processor to blend the soup to your desired consistency. Add a dollop of Greek yoghurt and serve.
