QUICK & EASY STICKY ASIAN MINCE WITH RICE
Serves 4
Ingredients:
1 tablespoon peanut oil
1 small brown onion, sliced
400g mince (I used pork, but you can use chicken, beef or lamb)
2 cloves garlic, very finely chopped
3cm piece ginger, very finely chopped
1 small red capsicum, diced
1 cup green beans, trimmed and roughly chopped
3 spring onion, finely sliced
1/4 cup thai basil leaves, chopped
1/4 cup crushed roasted peanuts
Cooked white or brown rice to serve
Sauce:2 tablespoon soy sauce
2 tablespoons fresh lime juice
2 tablespoons brown sugar
2 tablespoons fish sauce
Method:
For the sauce: Mix all ingredients together in a small bowl. Set aside.
Place a large fry pan or wok onto medium/high heat, add the oil and let it heat. Add the onion and cook, stirring, for 2-3 minutes. Add the mince to the pan and use a wooden spoon to break it up into small pieces over 3-4 minutes. Then add the garlic and ginger, cook this while stirring for 1-2 minutes.
Add the red capsicum and green beans and stir these through for 2-3 minutes. Turn the heat to high. Then add the sticky sauce, stir through and then leave the mince without stirring for 2-3 minutes, so that it caramelises with the sugar. It should darken and look more saucy.
To serve up: Place rice into bowls and spoon over some of the sticky mince. Top with spring onion, thai basil and crushed peanuts.
