HUMMUS WITH AVOCADO, POMEGRANATE & MINT SALSA

My new favourite dip!!!
Fresh, light, easy and addictive!!!

Serves 6-8 as a starter

Ingredients:

  • 1 lebanese cucumber, very finely diced

  • 1 avocado, very finely diced

  • 2 radish, very finely diced

  • 1/2 red onion, very finely diced

  • 1/2 cup mint, finely chopped

  • 1 pomegranate, seeds removed

  • 2 tbsp extra virgin olive oil

  • 1 large lemon, juiced

  • Sea salt

  • 1 cup homemade or store bought hummus

  • 3 tablespoons Greek yoghurt


Method:

  1. 1. For the avocado salsa: Mix together the cucumber, avocado, radish, red onion and mint. Season well with salt. Add the extra virgin olive oil, half the lemon juice and toss together. Then add the pomegranate seeds and gently toss.

  2. Mix together the Greek yoghurt and hummus in a bowl.

  3. To assemble: Spread the hummus yoghurt out onto a plate or shallow bowl, use the back of a spoon to smooth it out and reach the edges. Top with spoonful’s of the avocado salsa in the middle of the plate/bowl and pile it nice and high (you still want to see the hummus on the outside). Squeeze with more lemon juice and serve.

    Serve with pita chips, toasted baguette, fresh baguette or normal crackers.
