Broccoli, Kale & Cashew Salad
Super easy, super quick and absolutely delicious! You can add a protein of choice if you wish.

Ingredients
- 2 cups kale finely shredded
- 1 tablespoon extra virgin olive oil
- 2 cups broccoli finely chopped
- 2 cups red cabbage very finely shredded
- 3 carrots cut into thin sticks
- 6 spring onions finely sliced
- 1/2 bunch coriander or mint, roughly chopped
- 1/2 cup cashews roasted & roughly chopped
- Dressing
- 1/4 cup extra virgin olive oil
- 1 tahini
- 1/2 orange juice squeezed
- 1 tablespoon honey
- 1 tablespoon white wine vinegar or apple cider vinegar
- sea salt & cracked black pepper
Instructions
- For the dressing: Combine all the ingredients in a small bowl. Season and adjust to taste.1/4 cup extra virgin olive oil, 1 tahini, 1/2 orange, 1 tablespoon honey, 1 tablespoon white wine vinegar, sea salt & cracked black pepper
- Place the kale in a large bowl, then drizzle over the olive oil. Use your fingers to massage the kale for 1 minute to soften the leaves.2 cups kale, 1 tablespoon extra virgin olive oil
