Broccoli, Kale & Cashew Salad

Super easy, super quick and absolutely delicious! You can add a protein of choice if you wish.

Ingredients
 
 

  • 2 cups kale finely shredded
  • 1 tablespoon extra virgin olive oil
  • 2 cups broccoli finely chopped
  • 2 cups red cabbage very finely shredded
  • 3 carrots cut into thin sticks
  • 6 spring onions finely sliced
  • 1/2 bunch coriander or mint, roughly chopped
  • 1/2 cup cashews roasted & roughly chopped

Dressing

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon tahini
  • 1/2 orange juice squeezed
  • 1 tablespoon honey
  • 1 tablespoon white wine vinegar or apple cider vinegar
  • sea salt & cracked black pepper

Instructions
 

  • For the dressing: Combine all the ingredients in a small bowl. Season and adjust to taste.
  • Place the kale in a large bowl, then drizzle over the olive oil. Use your fingers to massage the kale for 1 minute to soften the leaves.
  • Add the broccoli, red cabbage, carrot, spring onion, coriander or mint and cashews to the bowl. Season well and toss. Drizzle over the dressing and toss again.
