BROCCOLI, KALE & CASHEW SALAD

Super easy, super quick and absolutely delicious!!!

Takes no time to put together, full of goodies and very easy. You can add a protein of choice if you wish!

Serves 4


Ingredients:

  • 2 cups kale, finely shredded

  • 1 tablespoon extra virgin olive oil

  • 2 cups broccoli, finely chopped

  • 2 cups red cabbage, very finely shredded

  • 3 carrots, peeled and cut into thin sticks

  • 6 spring onion, finely sliced

  • 1/2 bunch of coriander OR mint, roughly chopped

  • 1/2 cup cashews, roasted and roughly chopped

    Dressing:

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon tahini

  • 1/2 orange, juice squeezed

  • 1 tablespoon honey

  • 1 tablespoon white wine vinegar or apple cider vinegar

  • Sea salt & cracked & black pepper

Method:

  1. Add all the dressing ingredients together and mix well. Season and adjust to taste.

  2. Add kale to a large bowl, then drizzle over 1 tablespoon of extra virgin olive oil. Use your fingers and massage the kale for about 60 seconds to soften the leaves. Then add the broccoli, red cabbage, carrots, spring onion, coriander or mint and finish with the chopped cashews. Season well and toss.

  3. Drizzle over the dressing and toss salad together.
