Creamy Chicken, Avocado & Mango Salad
ABSOLUTELY DELICIOUS!!! I inhaled this salad So fresh and creamy at the same time. No cooking is involved so it’s super quick. Perfect for lunch, dinner or taking to a bbq.
Ingredients
- 1 cup spinach or rocket
- 1 lebanese cucumber chopped into half moons
- 1 cup snow peas washed, trimmed & sliced
- 1/2 yellow capsicum sliced into strips
- 1 mango small, sliced
- 1 cup chicken cooked, store-bought chicken is fine
- 1 avocado sliced
- 2 tablespoons slivered almonds toasted
- ½ cup mint leaves
Dressing:
- 2 tablespoons greek yoghurt
- 1 tablespoon mayonnaise
- 1/2 teaspoon curry powder
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
Instructions
Method:
- For the dressing mix together the yoghurt, mayonnaise, curry powder, apple cider vinegar, sea salt & pepper. Set aside.
- In a medium/large bowl, add the spinach, cucumber, snow peas, capsicum, mango, chicken, avocado, almonds and mint. Drizzle over the yoghurt dressing and gently toss everything together.
