SESAME CHICKEN WITH ASIAN GREENS & RICE

Oh how I LOVE this dish!!!!!!!

It’s super easy, throw it all in a roasting dish, so very little dishes. This is one meal that I’m certain out whole family will eat, even my very picky 5 year old. Oh and did I mention it’s absolutely delicious also!!!!

The perfect weeknight meal.

Serves 4

Ingredients:

  • 6-8 chicken drumsticks, skin on

  • 1 bunch broccolini or broccoli, washed and chopped roughly

  • 2 bunches bok choy, washed and roughly chopped

  • 1 cup snow peas, washed and trimmed

  • 1 tablespoon sesame seeds

  • 4 spring onion, finely sliced

Marinade:

  • 1/4 cup soy sauce or tamari

  • 1/3 cup water

  • 1/4 cup chicken stock

  • 1 teaspoon honey

  • 2 tablespoons hoisin or oyster sauce

  • 1 teaspoon ginger, finely chopped

  • 1 teaspoon garlic, finely chopped

  • 1 teaspoon sesame oil

To Serve: White or brown rice

Method:

  1. Preheat the oven to 200 degrees Celsius. Cook rice as per packet instructions or use rice sachets.

  2. For the marinade: Mix all ingredients together in a bowl. Place the chicken drumsticks into a large roasting pan and pour 1/3 of the marinade over them. Toss the chicken through the marinade and roast for 20 minutes.

  3. Remove the chicken from the oven, move the chicken over to one side and add the broccolini or broccoli, bok choy and snow peas. Add another 1/3 of the marinade over the greens. Then move the greens underneath the chicken and let the chicken drumsticks sit on top of the greens. Add the rest of the marinade and sprinkle over the sesame seeds onto the drumsticks. Roast in the oven for 15 minutes. Remove.

  4. To serve: Add rice to bowls. Top with some greens, then follow with a chicken drumstick. Sprinkle over some spring onion and drizzle over some of the sauce from the roasting dish.
