ROAST BEEF, ROCKET & CRANBERRY SAUCE BAGUETTES
An easy crowd-pleaser!!!! This time of year can be a little crazy with family holidays or a household full of people. This recipe is easy, quick and a real favourite! Always good to use up Christmas leftovers too!
This can also be made with leftover Christmas ham.
Serves 4
Ingredients:
1 baguette
2 tablespoons cranberry sauce
1 tablespoon dijon mustard
8 pieces roast beef (store-bought)
2 tomatoes, sliced
1/2 Spanish onion, finely sliced
Handful rocket leaves
1 tablespoon mayonnaise (optional)
Method:
Mix together the cranberry sauce and Dijon mustard.
Cut the baguette into four sections. Slice open the baguette and spread some of the cranberry sauce/Dijon mustard onto the bottom of the baguette. Add 2 slices of roast beef, some tomato slices and rocket leaves. Dollop on some extra cranberry sauce or mayonnaise.
