Roast Beef, Rocket & Cranberry Sauce Baguettes

An easy crowd-pleaser!!!! This time of year can be a little crazy with family holidays or a household full of people. This recipe is easy, quick and a real favourite! Always good to use up Christmas leftovers too!This can also be made with leftover Christmas ham.

Ingredients
 
 

  • 1 baguette
  • 2 tablespoons cranberry sauce
  • 1 tablespoon dijon mustard
  • 8 pieces roast beef store-bought
  • 2 tomatoes sliced
  • 1/2 red onion finely sliced
  • handful rocket leaves
  • 1 tablespoon mayonnaise optional

Instructions
 

Method:

  • Mix together the cranberry sauce and Dijon mustard.
  • Cut the baguette into four sections. Slice open the baguette and spread some of the cranberry sauce/Dijon mustard onto the bottom of the baguette. Add 2 slices of roast beef, some tomato slices and rocket leaves. Dollop on some extra cranberry sauce or mayonnaise.
