Mini Cheesy Tomato & Basil Chicken Strips
Little pillows of heaven! I love these beauties. This is a wonderful dinner for the kiddies, but also great for adults too. They take 5 minutes to prepare and then go straight in the oven. Absolutely magnificent.

Ingredients
- 8 chicken tenderloins
- 8 tablespoons pasta sauce
- 8 teaspoons panko breadcrumbs
- 1 tablespoon extra virgin olive oil
- 1 cup parmesan cheese finely grated
- 1 teaspoon italian herbs dried
- 1/2 cup basil leaves finely chopped
- sea salt & cracked black pepper
- 1/2 cup mozzarella cheese grated
Instructions
- Preheat the oven to 200°C conventional (180°C fan-forced). Line a tray with baking paper.
- Place the chicken tenderloins on the tray. Spread the pasta sauce along the top of the tenderloins, then sprinkle with the panko breadcrumbs and drizzle over the olive oil.8 chicken tenderloins, 8 tablespoons pasta sauce, 8 teaspoons panko breadcrumbs, 1 tablespoon extra virgin olive oil
- In a small bowl, mix together the parmesan cheese, italian herbs and basil. Season with salt and pepper, then sprinkle on top of the chicken.1 cup parmesan cheese, 1 teaspoon italian herbs, 1/2 cup basil leaves, sea salt & cracked black pepper
- Bake for 10 minutes. Sprinkle over the mozzarella cheese and bake for a further 5 minutes. Remove and serve.1/2 cup mozzarella cheese
