Mini Cheesy Tomato & Basil Chicken Strips
Little pillows of heaven! I love these beauties. This is a wonderful dinner for the kiddies, but also great for adults too. They take 5 minutes to prepare and then go straight in the oven. Absolutely magnificent.
Ingredients
- 8 chicken tenderloins
- 8 tablespoons pasta sauce
- 8 teaspoons panko breadcrumbs
- 1 tablespoon extra virgin olive oil
- 1 cup parmesan cheese finely grated
- 1 teaspoon italian herbs dried
- 1/2 cup basil leaves finely chopped
- sea salt & cracked black pepper
- 1/2 cup mozzarella cheese grated
Instructions
- Preheat the oven to 200°C. Line a tray with baking paper.
- Place the chicken tenderloins on the tray. Spread the pasta sauce along the top of the tenderloins, then sprinkle with the panko breadcrumbs and drizzle over the olive oil.
- In a small bowl, mix together the parmesan cheese, italian herbs and basil. Season with salt and pepper, then sprinkle on top of the chicken.
- Bake for 10 minutes. Sprinkle over the mozzarella cheese and bake for a further 5 minutes. Remove and serve.
