Mini Cheesy, Tomato & Basil Chicken Strips
Little pillows of heaven. LOVE these beauties.Really easy and wonderful dinner for the kiddies, but also great for adults too.They take 5 minutes to prepare and straight in the oven. Absolutely magnificent!!!Makes 8 strips
Ingredients
- 8 chicken tenderloins
- 8 tablespoons pasta sauce
- 8 teaspoons panko breadcrumbs
- 4 teaspoons olive oil extra virgin
- 1 cup parmesan cheese finely grated
- 1 teaspoon dried italian herbs
- 1/2 cup basil finely chopped
- sea salt
- cracked black pepper
- 1/2 cup mozzarella cheese grated
Instructions
Method:
- Preheat oven to 200 degrees celcius.
- Lay out the chicken tenderloins on a lined baking tray. Spread the pasta sauce along the top of the tenderloins. The sprinkle over the panko breadcrumbs. Drizzle each tenderloin with a little olive oil.
- In a small bowl, mix together the parmesan cheese, Italian herbs, sea salt, pepper and basil. Then sprinkle this mix on top of each of the tenderloins.
- Bake in the oven for 10 minutes. Then pull the tray out and sprinkle over the mozzarella cheese. Bake for a further 5 minutes. Remove and serve.
