Mini Cheesy Tomato & Basil Chicken Strips

Little pillows of heaven! I love these beauties.
This is a wonderful dinner for the kiddies, but also great for adults too. They take 5 minutes to prepare and then go straight in the oven. Absolutely magnificent.

Ingredients
 
 

  • 8 chicken tenderloins
  • 8 tablespoons pasta sauce
  • 8 teaspoons panko breadcrumbs
  • 1 tablespoon extra virgin olive oil
  • 1 cup parmesan cheese finely grated
  • 1 teaspoon italian herbs dried
  • 1/2 cup basil leaves finely chopped
  • sea salt & cracked black pepper
  • 1/2 cup mozzarella cheese grated

Instructions
 

  • Preheat the oven to 200°C conventional (180°C fan-forced). Line a tray with baking paper.
  • Place the chicken tenderloins on the tray. Spread the pasta sauce along the top of the tenderloins, then sprinkle with the panko breadcrumbs and drizzle over the olive oil.
  • In a small bowl, mix together the parmesan cheese, italian herbs and basil. Season with salt and pepper, then sprinkle on top of the chicken.
  • Bake for 10 minutes. Sprinkle over the mozzarella cheese and bake for a further 5 minutes. Remove and serve.
