MINI CHEESY, TOMATO & BASIL CHICKEN STRIPS

Little pillows of heaven. LOVE these beauties.
Really easy and wonderful dinner for the kiddies, but also great for adults too.

They take 5 minutes to prepare and straight in the oven. Absolutely magnificent!!!

Makes 8 strips


Ingredients:

  • 8 chicken tenderloins

  • 8 tablespoons pasta sauce

  • 8 teaspoons panko breadcrumbs

  • 4 teaspoons extra virgin olive oil

  • 1 cup parmesan cheese, finely grated

  • 1 teaspoon dried Italian herbs

  • 1/2 cup basil, finely chopped

  • Sea salt & cracked black pepper

  • 1/2 cup mozzarella cheese, grated


Method:


1. Preheat oven to 200 degrees celcius.

2. Lay out the chicken tenderloins on a lined baking tray. Spread the pasta sauce along the top of the tenderloins. The sprinkle over the panko breadcrumbs. Drizzle each tenderloin with a little olive oil.

3. In a small bowl, mix together the parmesan cheese, Italian herbs, sea salt, pepper and basil. Then sprinkle this mix on top of each of the tenderloins.

4. Bake in the oven for 10 minutes. Then pull the tray out and sprinkle over the mozzarella cheese. Bake for a further 5 minutes. Remove and serve.
