Egg, Grandma Ham & Avocado Tortilla Breakfast Wrap

Ingredients
 
 

  • 1 tortilla medium/large
  • 2–3 eggs lightly whisked
  • sea salt & cracked black pepper
  • 1/2 cup cherry tomatoes halved
  • 1 tablespoon sweet chilli sauce
  • 1/2 baby spinach chopped
  • 1 handful tasty cheese grated
  • 2 slices ham
  • 1/4 avocado sliced

Instructions
 

  • Place a large frying pan (one that is about the size of the tortilla) over medium heat. Whisk and season the eggs with salt and pepper. Add the cherry tomatoes to the pan and cook for 2–3 minutes. Then add the sweet chilli sauce and spinach and cook for 1 minute. Pour in the egg, sprinkle over the grated cheese and cook for 3 minutes.
  • Place the tortilla on top of the egg, then flip the tortilla over with a spatula or dinner plate, so that the tomatoes are facing up. Slip it back into the frying pan.
  • Add the ham and avocado to one half of the pan. Fold the tortilla over to cover the filling. Remove, slice into wedges and enjoy.
