Egg Tortilla Wrap With Cherry Tomatoes & Avocado

Ingredients
 
 

  • 1 tortilla medium/large
  • 2–3 eggs lightly whisked
  • sea salt & cracked black pepper
  • 1/2 cup cherry tomatoes halved
  • 1 handful baby spinach
  • 1/2 cup mozzarella cheese or cheddar cheese, grated
  • 2–3 slices ham
  • 1/4 avocado sliced

Instructions
 

  • Place a large frying pan (one that is about the size of the tortilla) over medium heat. Season the eggs with salt and pepper. Add the cherry tomatoes and spinach to the pan and cook until the spinach is wilted. Add the whisked eggs and spread them out so they fill the pan. Sprinkle over half the grated cheese. Cook for 2–3 minutes. Place the tortilla on top of the eggs, then flip the tortilla over with a spatula, so that the egg is facing up.
  • Add the ham and avocado to one half of the pan and sprinkle over the remaining grated cheese. Fold the tortilla over so it covers the filling. You can use a spatula to hold it down for the first minute. Cook for 2 minutes until the cheese has melted. Remove, slice into wedges and enjoy.
