Quick & Easy Tuna & Corn Mix
Ingredients
- 370 g canned tuna drained
- 125 g canned corn drained
- 2 spring onions finely sliced
- parsley or mint, finely chopped
- 2 tablespoons greek yoghurt or natural yoghurt
- lemon juice fresh, good squeeze
- red chilli flakes optional
- rocket leaves optional
- sourdough bread optional
Instructions
- For the mix: Add tuna, corn, spring onion and parsley/mint to a bowl. Mix in the yoghurt dressing and season well. Season well and add lemon juice. Combine.
- Feel free to add chilli flakes and rocket.
