Quick & Easy Tuna & Corn Mix

Ingredients
 
 

  • 370 g canned tuna drained
  • 125 g canned corn drained
  • 2 spring onions finely sliced
  • parsley or mint, finely chopped
  • 2 tablespoons greek yoghurt or natural yoghurt
  • lemon juice fresh, good squeeze
  • red chilli flakes optional
  • rocket leaves optional
  • sourdough bread optional

Instructions
 

  • For the mix: Add tuna, corn, spring onion and parsley/mint to a bowl. Mix in the yoghurt dressing and season well. Season well and add lemon juice. Combine.
  • Feel free to add chilli flakes and rocket.
  • Serve it on any of the following:
    On its own
    As a dip with crackers
    On corn thins
    On sourdough
    In a wrap or sandwich
