Zucchini Slice With Juicy Cherry Tomatoes
School is FINALLY back next week!!So lunch box making is bout to be in full swing. My zucchini slice recipe is a perfect lunchbox filler. It’s easy, freezer-friendly and so easy to grab and go
Ingredients
- 2 green zucchinis large, grated
- 5 rasher bacons diced
- 1 brown onion small, diced
- 1 cup tasty cheese grated
- 6 eggs whisked
- 1 cup self raising flour
- 1/4 cup olive oil light extra virgin
- sea salt
- cracked black pepper
- 1 cup cherry tomatoes halved (optional)
Instructions
Method:
- Preheat oven to 180 degrees Celsius.
- In a large bowl, whisk together the eggs and self-raising flour. Then add onion, bacon, olive oil, zucchini and tasty cheese. Mix together.
- Pour into a lined square cake tin and flatten down with a spoon or spatula. Top with the halved cherry tomatoes in rows (flesh side facing up).
- Bake in the oven for approx 35 mins at 180 degrees Celsius.
- YUMMO!!!!! I have to stick mine in the freezer pretty quickly or I actually devour the whole thing. Give it a shot
