Baked Salmon With Roza’s Pesto, Pine Nuts & Parsley

Ingredients
 
 

  • 1.2 kg salmon side
  • 1 teaspoon sea salt
  • 2 tablespoons olive oil extra virgin
  • 1 lemon juicy, juiced & zested
  • 2 cloves garlic finely chopped
  • 2 tablespoons butter melted
  • 2 tablespoons parsley chopped
  • sea salt
  • cracked black pepper
  • 3 lemon slices/rounds, sliced in half
  • 3 tablespoons pesto traditional
  • 1 tablespoons parsley chopped
  • 2 tablespoons pine nuts toasted
  • lemon juice, extra for serving

Instructions
 

Method:

  • Preheat oven to 180 degrees Celsius. Remove the side of salmon from the fridge and lay (skin side down) on a lined baking tray. Season with sea salt flakes.
  • For the marinade: Mix the extra virgin olive oil, lemon zest & juice, garlic, butter and parsley. Season well and mix. Pour the marinade over the side of the salmon, so it covers all areas. Place the half lemon slices on top of the marinade. Place in the oven and bake for approx. 20-25 mins (depending on thickness and desire).
  • Once the salmon has rested for 10 minutes, add the Traditional Pesto on top of the salmon and spread it with the back of a spoon. Sprinkle over the chopped parsley, pine nuts and lemon juice.
