Beef & Black Bean Stir-fry
A childhood favourite of mine. When I got told we were having this for dinner, I was always STOKED!!!!It’s easy, it’s quick, generally kid-friendly. Just the perfect weeknight meal for the whole family.
Ingredients
- 500 g beef strips
- 1 teaspoon five spice powder
- 2 tablespoons peanut oil or extra virgin olive oil
- 2 cloves garlic finely chopped
- 3 cm ginger finely chopped
- 1 brown onion small, thinly sliced
- 1 red capsicum small, cut into strips
- 1 yellow capsicum small, cut into strips
- 1/2 broccoli florets head chopped
- 4 spring onion finely sliced
Sauce:
- 1/2 cup chicken stock
- 1 teaspoon corn flour
- 1 tablespoon soy sauce
- 2 tablespoons black bean sauce
- brown rice or white rice to serve.
Instructions
Method:
- Combine the five spice powder and beef strips in a bowl.
- For the sauce: Add all ingredients together in a small jug or bowl. Set aside.
- Heat half the peanut oil in a large frying pan/wok and add the beef in batches. Sear each side for approx. 1 minute or until browned. Continue until all beef is seared. Remove and set aside.
- Heat the remaining peanut oil in the same frying pan/wok over high heat. Add the onion, garlic and ginger and stir-fry for 2-3 minutes. Add the capsicum, spring onion and broccoli to the pan and stir-fry for 3-4 minutes.
- Add the sauce to the vegetables and stir through quickly over high heat. Then add the beef strips back to the pan and stir through until the sauce has thickened slightly (one minute). Turn off the heat.
- Serve on white or brown rice.
