Beef & Black Bean Stir-Fry
A childhood favourite of mine. When I got told we were having this for dinner, I was always stoked. It’s easy, quick and generally kid-friendly. The perfect weeknight meal for the whole family.
Ingredients
- 500 g beef strips
- 1 teaspoon five spice powder
- 2 tablespoons peanut oil or extra virgin olive oil
- 1 brown onion small, thinly sliced
- 2 cloves garlic finely chopped
- 3 cm ginger piece finely chopped
- 1 red capsicum small, cut into strips
- 1 yellow capsicum small, cut into strips
- 1/2 head broccoli florets chopped
- 4 spring onions finely sliced
- cooked rice white or brown, to serve
Sauce
- 1/2 cup chicken stock
- 1 teaspoon cornflour
- 1 tablespoon soy sauce
- 2 tablespoons black bean sauce
Instructions
- Combine the beef strips and five spice powder in a bowl.
- For the sauce: Combine all the ingredients in a small jug or bowl. Set aside.
- Heat half the peanut oil in a large frying pan or wok and add the beef in batches. Sear for about 1 minute each side or until browned. Continue until all the beef is cooked. Remove and set aside.
- Heat the remaining peanut oil in the same frying pan or wok over high heat. Add the onion, garlic and ginger and stir-fry for 2–3 minutes. Add the capsicum, broccoli and spring onion to the pan and stir-fry for 3–4 minutes.
- Add the sauce to the vegetables and stir through quickly over high heat. Then add the beef strips back to the pan and stir through until the sauce has thickened slightly, about 1 minute.
- Serve the stir-fry with white or brown rice.
