TERIYAKI SESAME CHICKEN WITH RICE & BROCCOLINI

This is my lazy dinner! When I can’t be bothered thinking about what to cook, but still want a proper meal. It’s quick, easy and always yummy!

Serves 2


Ingredients:

  • 1 tablespoon sesame seeds

  • 3 spring onion, finely sliced

  • 1 lime, cut into quarters

  • 1 bunch broccolini

  • 3/4 cup white or brown rice

    Marinade:

  • 1/4 cup soy sauce or tamari

  • 2 tablespoons rice wine vinegar

  • 2 tablespoons brown sugar

  • 1 tablespoon cornflour

  • 3cm piece ginger, finely chopped

  • 2 garlic cloves, finely chopped

  • 2 small chicken fillets, approx. 300g, cut into cubes

Method:

  1. For the marinade: Mix all ingredients together. Add the chicken pieces and mix well into the marinade.

  2. Place a medium saucepan onto high heat. Add 1.5 cups water and the rice. Bring to the boil and then turn down to a very gentle simmer. Place the lid on and cook for 12-14 minutes. Turn off the heat. Let it stand for 3-4 minutes. Fluff with a fork.

  3. Place a large frying pan onto medium/high heat. Add the chicken pieces and make sure to spread them out, so they don’t stew. After approx. 2 minutes, add a little water (about 1/4 cup) into the pan to stop it from burning. Continue cooking chicken for approx. 4 minutes each side until cooked through.

  4. Meanwhile, place the broccolini in a microwave safe bowl, cover with water. Cook in the microwave on high for 5 minutes (while the chicken and rice is cooking). Remove and drain the broccolini.

  5. To serve: Add the rice to the bowl, then add the teriyaki chicken on top. Add the broccolini, top with some sesame seeds and sliced spring onion. Squeeze over some fresh lime juice.
