Teriyaki Sesame Chicken With Rice & Broccolini

This is my lazy dinner! I make it when I can’t be bothered thinking about what to cook, but still want a proper meal. It’s quick, easy and always yummy!

Ingredients
 
 

  • 3/4 cup white rice or brown rice
  • 1 1/2 cups water
  • 1 bunch broccolini
  • 1 tablespoon sesame seeds
  • 3 spring onions finely sliced
  • 1 lime cut into quarters
  • 1/4 cup soy sauce or tamari
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornflour
  • 3 cm ginger piece finely chopped
  • 2 cloves garlic finely chopped
  • 2 chicken fillets about 300 g in total, cut into cubes

Instructions
 

  • For the teriyaki chicken: Place all the ingredients in a bowl and mix well to coat the chicken in the marinade.

  • Place the rice and water in a medium saucepan over high heat. Bring to the boil, then turn down to a very gentle simmer. Place the lid on and cook for 12–14 minutes. Turn off the heat and let it stand for 3–4 minutes. Fluff with a fork.

  • Place a large frying pan over medium–high heat. Add the chicken pieces, spreading them out so they don’t stew. After about 2 minutes, add 1/4 cup of water to the pan to stop it from burning. Continue cooking for about 4 minutes each side until cooked through.

  • While the chicken and rice are cooking, place the broccolini in a microwave safe bowl and cover with water. Microwave on high for 5 minutes. Remove and drain.

  • To serve: Add the rice to bowls, then top with the teriyaki chicken and broccolini. Sprinkle over the sesame seeds and sliced spring onion. Squeeze over some fresh lime juice.
