This is my lazy dinner! I make it when I can’t be bothered thinking about what to cook, but still want a proper meal. It’s quick, easy and always yummy!
For the teriyaki chicken: Place all the ingredients in a bowl and mix well to coat the chicken in the marinade.

Place the rice and water in a medium saucepan over high heat. Bring to the boil, then turn down to a very gentle simmer. Place the lid on and cook for 12–14 minutes. Turn off the heat and let it stand for 3–4 minutes. Fluff with a fork.
3/4 cup white rice, 1 1/2 cups water
Place a large frying pan over medium–high heat. Add the chicken pieces, spreading them out so they don’t stew. After about 2 minutes, add 1/4 cup of water to the pan to stop it from burning. Continue cooking for about 4 minutes each side until cooked through.

While the chicken and rice are cooking, place the broccolini in a microwave safe bowl and cover with water. Microwave on high for 5 minutes. Remove and drain.
1 bunch broccolini
To serve: Add the rice to bowls, then top with the teriyaki chicken and broccolini. Sprinkle over the sesame seeds and sliced spring onion. Squeeze over some fresh lime juice.
