An easy crowd-pleaser! This time of year can be a little crazy with family holidays or a household full of people. This recipe is easy, quick and a real favourite. Always good to use up Christmas leftovers too! These baguettes can also be made with leftover Christmas ham.
Mix the cranberry sauce and mustard in a small bowl.
Cut the baguette into four sections. Slice open the baguette and spread some of the cranberry and mustard mix onto the bottom. Add two slices of roast beef, some tomato slices, rocket leaves and red onion. Dollop on some extra cranberry sauce or mayonnaise, if desired.
