Oh how I LOVE this dish! It’s super easy – you throw it all in a roasting dish, so there are very few dirty dishes. This is one meal that I’m certain our whole family will eat, even our very picky 5-year-old. Oh and did I mention it’s absolutely delicious?!
Preheat the oven to 200°C conventional (180°C fan-forced).
For the marinade: Mix all the ingredients in a bowl.
1/4 cup soy sauce or tamari , 1/3 cup water, 1/4 cup chicken stock , 1 teaspoon honey , 2 tablespoons hoisin or oyster sauce , 1 teaspoon ginger, finely chopped , 1 teaspoon garlic, finely chopped , 1 teaspoon sesame oil
Place the chicken drumsticks in a large roasting dish and pour over one-third of the marinade. Toss to coat the chicken and roast for 20 minutes.
6–8 chicken drumsticks
Remove from the oven, move the chicken over to one side of the dish and add the broccolini, bok choy and snow peas. Pour another one-third of the marinade over the greens. Then move the greens underneath the chicken, letting the drumsticks sit on top. Add the remainder of the marinade and sprinkle the sesame seeds onto the drumsticks. Roast for 15 minutes or until the chicken is cooked through.
1 bunch broccolini, 2 bunches bok choy, 1 cup snow peas, 1 tablespoon sesame seeds
To serve: Add rice to bowls, top with some greens, then follow with a chicken drumstick. Sprinkle with the spring onion and drizzle over some of the sauce from the roasting dish.
