Creamy Chicken, Avocado & Mango Salad

Absolutely delicious! I inhaled this salad. So fresh and creamy at the same time. No cooking is involved so it’s super quick. Perfect for lunch, dinner or taking to a barbecue.

Ingredients
 
 

  • 1 cup baby spinach or rocket
  • 1 lebanese cucumber chopped into half moons
  • 1 cup snow peas trimmed & sliced
  • 1/2 yellow capsicum sliced into strips
  • 1 mango small, sliced
  • 1 cup cooked chicken shredded (store bought is fine)
  • 1 avocado sliced
  • 2 tablespoons slivered almonds toasted
  • 1/2 cup mint leaves

Dressing

  • 2 tablespoons greek yoghurt
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon curry powder
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked black pepper

Instructions
 

  • For the dressing: Combine all the ingredients in a small bowl. Set aside.
  • In a large bowl, place the spinach, cucumber, snow peas, capsicum, mango, chicken, avocado, almonds and mint. Drizzle over the yoghurt dressing and gently toss everything together.
