TUNA, WHITE BEAN & PINE NUT SALAD
I make this regularly in my working week. I pretty much always have the ingredients on hand and I can throw it together really quickly.
It’s healthy, easy to make, very quick and tastes really great!!
Serves 1
Ingredients:
3/4 cup spinach, chopped
3/4 cup cannellini beans, drained
1 tomato, cut into pieces
1/2 Lebanese cucumber, cut into rounds
1/4 cup olives, chopped
1/4 small Spanish onion, sliced
90g can tuna, drained
1/4 cup parsley or dill, chopped
2 tablespoons toasted pine nuts
1 tablespoon extra virgin olive oil
1/2 juicy lemon, juice squeezed
Sea salt
Black pepper
Method:
Place all ingredients in a bowl and toss to combine. Drizzle over the olive oil and squeeze over the lemon juice. Toss gently and season well.
