Tuna, White Bean & Pine Nut Salad

I make this regularly in my working week. I pretty much always have the ingredients on hand and I can throw it together really quickly. It’s healthy, easy to make and tastes really great!

Ingredients
 
 

  • 3/4 cup baby spinach chopped
  • 3/4 cup canned cannellini beans drained
  • 1 tomato cut into pieces
  • 1/2 lebanese cucumber cut into rounds
  • 1/4 cup olives pitted, chopped
  • 1/4 red onion small, sliced
  • 90 g canned tuna drained
  • 1/4 cup parsley leaves or dill, chopped
  • 2 tablespoons pine nuts toasted
  • 1 tablespoon extra virgin olive oil
  • 1/2 lemon juice squeezed
  • sea salt & cracked black pepper

Instructions
 

  • Place all the ingredients (except the olive oil and lemon juice) in a bowl and toss to combine.
  • Drizzle over the olive oil and squeeze over the lemon juice. Toss gently and season well.
