I make this regularly in my working week. I pretty much always have the ingredients on hand and I can throw it together really quickly. It’s healthy, easy to make and tastes really great!
Place all the ingredients (except the olive oil and lemon juice) in a bowl and toss to combine.
3/4 cup baby spinach, 3/4 cup canned cannellini beans, 1 tomato, 1/2 lebanese cucumber, 1/4 cup olives, 1/4 red onion, 90 g canned tuna, 1/4 cup parsley leaves, 2 tablespoons pine nuts, 1/2 lemon, sea salt & cracked black pepper
Drizzle over the olive oil and squeeze over the lemon juice. Toss gently and season well.
